In the heat of the flame that burns the Wood, pizza is cooked evenly, giving it a crispy crust with a slightly smoked taste and a base that is still soft. The tomato sauce is made daily and used in proportions that do not obscure the taste of the other ingredients. The constant flow of air and heat within the dense walls allows for crisper ingredients than those extracted from a conventional oven, which keeps vegetables rich in flavor and nutrients.
